The only Turkey Chili recipe you will ever need

I firmly believe that this is the only turkey chili recipe you will ever need! I’ve shared several variations of chili over the past couple years, but this cozy bowl of turkey chili is definitely the best so far.

I love prepping a big pot of this on Sunday for quick and satisfying meals throughout the week. Chili is incredibly versatile, so get creative with different types of veggies, protein, legumes and toppings. This version is rich in fiber (so many veggies & beans!), protein and fat. Don’t be intimidated by the long ingredient list — this recipe comes together super quickly!


Turkey Chili

Serves 6


INGREDIENTS

  • 2 large carrots, diced

  • 3 large stalks of celery, halved and diced

  • 2 bell peppers, diced 

  • 1/2 white onion, finely diced

  • 2-3 cloves of garlic, minced

  • 1 jalapeño, finely diced

  • 1 lb lean ground turkey 

  • 4 tbsp chili powder 

  • 1 tbsp paprika

  • 1/2 tbsp oregano

  • 1/4 tsp cayenne pepper 

  • 1 tsp cinnamon 

  • Salt & pepper to taste 

  • 1 can organic corn, drained and rinsed 

  • 1 can black beans, drained and rinsed

  • 1 can kidney beans, drained and rinsed

  • 1 24 ounce can of diced tomatoes 

  • 2 cups low sodium chicken broth

DIRECTIONS

  1. Heat 2 tbsp oil in large pot over medium heat.

  2. Add carrot, celery, onion, peppers, garlic and season with salt & pepper. Sauté for about 5 minutes.

  3. Add ground turkey and break up into small pieces - sauté until all of the pink is gone from the turkey.

  4. Add the spices and more salt & pepper. Add beans, corn, tomatoes and broth. Bring to a boil and simmer for 20-30 mins (or longer if desired!)

  5. Add the juice of 2 limes at the end. Enjoy!
